Marilee's Healthy Cornbread Recipe
Cornbread is a comfort food staple, perfect alongside soups, chilis, and holiday spreads alike. Unfortunately, most store-bought mixes and traditional recipes are packed with refined oils, processed sugars, and unnecessary additives that don’t align our healthy home.
The good news? Making your own wholesome cornbread at home is simple, satisfying, and just as delicious (if not better!) than what you’ll find on the shelves. This version keeps the ingredients clean and nourishing, so you can enjoy without compromise.

Ingredients:

3 c. organic yellow corn meal (not coarsely ground)- Arrowhead Mills is a great bread

1 t. sea salt

4 T. ghee
-
2 c. boiling water
-
1 c. organic kefir or milk of choice

4 organic eggs, beaten
-
1 T. baking powder (no aluminum)
Directions:

Preheat oven to 425°F.

Melt the ghee and mix with cornmeal.

Pour boiling water (with the salt) over the cornmeal mixture and stir until well mixed.

Add the milk to the mixture and set aside to cool, about 40 minutes.

When cool, blend eggs + baking powder together then mix in

Grease 8x8 dish and place in the oven for 2–3 min.

Pour batter in dish; bake 30–40 min.

Test for doneness.
*Pro tip: Try not to open the oven and check until the corn bread has fully risen and is almost done. Turn the oven down if necessary to finish cooking.
And you're done! Serve your cornbread fresh out of the oven or warmed up the next day. One of our favorite ways to enjoy it is with a drizzle of raw honey or with some ghee on top. Simple, cozy, and naturally sweet, it’s the perfect treat for any season and loved by both kids and adults alike!
